Thanksgiving standards like turkey, mashed potatoes and gravy aside, it’s really the stuffing recipe that sets the mood for your meal. Are you a traditionalist with a simple bread stuffing? Do you like it with sausage or fruit? Seafood or veggies? Is it gluten-free or gluten-full? Try one of these ultimate stuffing recipes for your holiday celebration.

Before we get to the good stuff (pun intended), let’s talk about stuffing the turkey. Is it a must-do? Or a definite, don’t?

To stuff or not to stuff the turkey

To me, the question is personal, depending on what you’re used to. My grandmother always stuffed her turkey and any leftovers made it into a casserole dish.

The stuffing from the cavity of the bird was always moist, but it didn’t have those crispy, craggy edges that you get in a baked casserole. (Strike one).

Then there’s the whole “food-safety issue“. Hello — bacteria that will live in stuffing if it doesn’t reach 165° F. (Strike two – we don’t want food poisoning four hours post-dinner).

A stuffed turkey takes longer to cook than an unstuffed one. Seriously? Yep. (Strike three.)

In case you can’t tell, I’m a stuffing casserole devotee, but you should do what your family likes best — just make sure it’s cooked completely, please!

Let’s get to some of the best Thanksgiving stuffing recipes to make your holiday shine!

I’ve partnered with my fellow recipe developers and professional taste testers to compile this list for you, and it includes everything from traditional favorites to “where did they come up with that” modern twists.

We’ve got whole grain and grain-free options, vegan and vegetarian, carnivore to pescatarian and everything in between. Find your stuffing style here.

FAQs

What is traditional stuffing made of? ›

Classic stuffing made with bread cubes, seasonings, and held together with chicken stock and eggs. A holiday staple!

What can I add to stuffing mix? ›

Some of my specialty stuffing recipes have sweet flavors mixed in to balance the savory dish like cubed apples, chopped figs, or dried raisins or craisins. Sautee mushrooms with the onions and celery to bring in an earthy flavor (I like this to balance the sweet brioche).

Should I put egg in my stuffing? ›

The most important ingredient of stuffing may be the binder, which keeps all the other elements in place. For a fluffy texture, use eggs. Stock is the most-used binder. Less conventional possibilities include fruit juice (such as apple or orange) and alcohol (wine or liqueur).

Is it better to stuff the turkey or make the stuffing on the side? ›

Bishop: Instead, put the stuffing in a dish — but then it becomes "dressing," if you want to be technical about it. The problem is, when you stuff the turkey, yes, the stuffing gets all of the wonderful flavors from the bird, but it makes it much more difficult to cook the bird.

What is the best store bought stuffing mix? ›

Best Overall: Pepperidge Farm Herb Seasoned Classic Stuffing Mix. Our top-performing stuffing proved excellent when served straight off of the stove and after some time in the oven. Pepperidge Farm uses both white and wheat bread to make its stuffing cubes, and the contrast shows through in flavor and in texture.

Is it OK to make stuffing a day ahead of time? ›

No matter where you fall, getting a head start on what can be prepared before the big day is essential. One question that always crops up: Can you make stuffing ahead of time? The short answer to whether you can making stuffing ahead of time is yes.

What is the difference between Thanksgiving dressing and stuffing? ›

"Stuffing is cooked in the cavity of the turkey, so the juices soak into the ingredients, making it more flavorful. Dressing gets cooked on its own and needs extra liquid to make it flavorful." So stuffing is cooked inside the bird. Dressing is cooked outside the bird, usually in a casserole dish.

What is the best bread to use for stuffing? ›

Sourdough, Italian, and white bread are standard choices for stuffing; however, journeying beyond your comfort zone can produce excellent results.

Should you stir stuffing? ›

The bread in the stuffing absorbs moisture, but if it's dry (as it should be, see above), it takes some time for the liquid to settle in. I suggest adding a little at a time, say 1 cup of broth for every 4 cups of dry mix. Give it a good stir, then let it sit for a minute. The stuffing should be moist but not wet.

Do you use stock or broth for stuffing? ›

You can use either stock or broth for keeping dressing moist or as a basis for gravy, but a strong flavor will give you better results.

Do you cook stuffing before putting it in the turkey? ›

Fully cook raw meat, poultry, or seafood ingredients before adding to stuffing. Combine the ingredients and place them in your bird immediately before cooking. Don't stuff whole poultry with cooked stuffing. In addition to the turkey, the stuffing's center needs to reach 165 F.

Can you mess up stuffing? ›

Your Bread Is Too Fresh

There's nothing better than soft, fresh bread—except for when it comes to stuffing. If you want your stuffing to hold up and not end up a soupy, soggy mess, make sure your bread is dried out or staled for a few days.

Why is my stuffing always mushy? ›

If the stuffing came out too wet and soggy (aka bread soup!) try not to over mix it, otherwise it'll turn into mush. Curtis Stone says to pour it on a large sheet tray and spread it out. Bake it on high heat to crisp it up, but make sure it doesn't burn.

How soggy should stuffing be before baking? ›

We recommend adding stock a little at a time--1/2 cup to 1 cup, depending on how much stuffing you're making--and waiting for the bread to absorb the liquid before adding more. Once the bread is moist but not sitting in a pool of stock, it's ready.
