Nacho Chicken is basically nachos on top of chicken! Think of it as making your favorite snack a little healthier by adding some protein. This only chicken dinner has a couple of ingredients and is so easy. It’s ready in less than 30 minutes.
NACHO CHICKEN
My husband and I try to have date night once a week. Logistically we end up at Cheesecake Factory 50% of the time because it’s close to the movie theaters and the shopping. I’m not complaining. Have you seen their menu? It’s about 30 pages long. There’s no way I could get sick of that place. We love the chicken nachos there. They’re super crisp and so delicious. One order is by no means meant for two people and we’ve conquered it by ourselves more than we like to admit.
I’m not saying that this tastes like their chicken nachos. Think of this as the jacked-up protein version of those. It’s really the simplest concept – nachos on chicken, but it’s really tasty. Chips and all the toppings piled on!
I added guacamole because in my opinion it can’t be called nachos without it.

Nacho Chicken

Servings: 4 servings
Ingredients
- 4 small boneless skinless chicken breasts, (see Note)
- 1/2 cup chunky salsa
- 1/4 cup sour cream
- 1/2 cup crushed tortilla chips
- 1/2 cup shredded Mexican cheese
- (optional) guacamole
Instructions
Preheat oven to 400 degrees.
Place chicken on foil-covered baking sheet.
Top each chicken breast evenly with salsa, sour cream and tortilla chips.
Bake 20 minutes. Remove from oven; sprinkle with cheese. Bake 10 minutes or until chicken is done and juices run clear. Top with guacamole if desired.
Notes
Notes: Make sure your chicken breasts are thin. I buy the ones from Costco which are really thick so I half them lengthwise to make thin breasts.

Brilliant, what a great way to use nachos on a chicken breast. I had some inspiration reading this recipe. One question .. Would it be possible to blitz the nachos and pane the chicken instead of using breadcrumbs?

I’ve been making a version of this for years. It’s my “go to” when theres not much left in the house & I’m short on time & inspiration! The only difference is I sprinkle low sodium taco seasoning on the breasts first & I’ve never added the tortilla chips. I’m now wondering how that never occurred to me!! Next time I’m trying it your way!!
