You could use carrots instead of sweet potatoes for one option. Carrots also have some amazing nutritional benefits so it doesn’t take away from this health factor in this warm winter vegan soup. I do try to limit my use of plant milk products because of their environmental impact. This may well be better than cow’s milk but they do use a lot of water and power in the manufacture of the milk. So, having thought about it I decided to try and replace it. I poured boiling water over some pearl barley and left it to soak overnight. In the morning I brought the pan back to the boil to make sure the barley was cooked through and then sieved the mixture to separate the liquid. You can use this liquid instead of the coconut milk and the recipe works just as well. Adding the soaked pearl barley to the soup makes it even more filling too,

Try Bulgar Wheat For A Different Flavour

You have to try this recipe with pearl barley instead of the orzo. The nutritional impact of the pearl barley is amazing (see above/Link ). Another tasty alternative is to use Bulgar Wheat. It will give you a nuttier flavour. Couscous is another great way to change the recipe too. You can use literally any kind of rice or pasta instead. Risotto rice gives you a very different alternative recipe as it will thicken up the mixture much more and turn it into something rich, creamy and very filling.

Jalapeno’s are well known from the world of fast food and are another great alternative.

Personal Favourites

My personal favourite is the classic bird eye chillies used in a lot of Thai food. You can Control the heat by removing the seeds from some of the chillies if you need to, retaining the flavour without making the recipe too hot. If you are feeling really brave you could try using Scotch Bonnet Peppers, but be careful to wash your hands after you have been chopping them to avoid painful accidents.
